Questions
Why does a cup of flour weigh less than a cup of sugar?
Cups measure volume and grams measure weight. Flour is light and airy (about 125 g a cup), while sugar packs densely (about 200 g a cup).
Are these US cups or metric cups?
US cups (236.6 ml). A metric cup is 250 ml, so it holds about 5% more.
How should I measure flour for these numbers?
Spoon flour into the cup and level it with a knife. Scooping straight from the bag packs it and can add 20–30 g per cup.
