Formulas

°F = °C × 9 ÷ 5 + 32

°C = (°F − 32) × 5 ÷ 9

For 180 °C: 180 × 9 ÷ 5 = 324, and 324 + 32 = 356 °F. Recipes round this to 350 °F.

Common oven temperatures

Questions

Should I lower the temperature for a fan oven?

Yes. A fan (convection) oven cooks faster, so set it about 20 °C (25 °F) lower than a recipe written for a conventional oven.

Why do recipes say 350 °F when 180 °C is 356 °F?

Oven dials move in steps of 25 °F and 10 °C, so recipes round to the nearest setting. The 6 °F difference doesn't change the result.

What is a moderate oven?

A moderate oven is about 180–190 °C (350–375 °F), or gas mark 4–5.
